Understanding the Differences

Cuvée Julien Brut:
  • Grape Varieties: Typically made from a blend of white grapes, often including Pinot Blanc and Auxerrois.

  • Production Method: Utilizes the traditional method, involving secondary fermentation in the bottle to create fine bubbles.

  • Characteristics: Known for its bright acidity, delicate fruit flavours, and subtle floral notes. It’s often light, refreshing, and versatile.

Dopff au Moulin Cuvée Julien Brut

This elegant blend of 50% Pinot Blanc and 50% Auxerrois is manually harvested and produced using the traditional method (méthode traditionnelle). The grapes are picked at the beginning of the harvest season to preserve their vividness, and only the first pressing juices are used. The wine ages for 24 months on slats, resulting in fine bubbles and complex flavors. With a very pale golden robe, fresh floral nose, and generous palate, it’s a sophisticated aperitif wine that pairs beautifully with fish terrine and Choucroute Royale.

Serving Temperature: 8°C.

Cuvée Blanc de Noirs Brut:
  • Grape Varieties: Made exclusively from dark-skinned grapes, primarily Pinot Noir.

  • Production Method: Also uses the traditional method, but the use of dark grapes gives it a distinct profile.

  • Characteristics: Tends to be richer and more robust, with notes of red fruits and a fuller body. It often has a more pronounced structure and complexity compared to Cuvée Julien Brut.
